Summery Savor

When's the last time you saw a Zucchini and thought of warm soft fresh baked bread?  Summer around here means lots of home grown goodness which in turn ultimately means Summery Savor.  Even though Zucchini Bread dates back the middle ages, it has been a hit in the United States since about the 60's.  This super moist bread was introduced as a healthy alternative to other desserts.  We are pretty positive that everyone has their own touch to making the best zucchini bread ever, but we think this recipe wins hands down. So go ahead and Enjoy, cause you have earned it!

Makes 2 Loaves of Zucchini Bread

What you will need:

  • 3 eggs                               
  • 1 cup oil
  • 2 cups sugar
  • 2 cup grated zucchini 
  • 2 tsp. vanilla
  • 3 cups flour
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 3 tsp. cinnamon

How to make it:

Preheat Oven to 325

Mix flour, soda, baking powder, salt, and cinnamon in a small bowl.  In a separate large bowl, beat eggs until light and foamy.  Add oil, sugar, zucchini and vanilla to eggs.  Mix lightly, but well.  Add the flour mixture and blend together.  Pour into 2 lightly greased loaf pans.  Bake at 325 for 1 hour. Check for doneness by inserting toothpick in center of loaf.  Remove from pan at once and cool on a rack.

To serve, spread butter on warm bread and enjoy.
